My Norwegian mother was fond of sharing a story her Norwegian mother passed down. It seems it was the fashion back in the old country for people to prepare Lutefisk in large ceramic pots kept out of doors (presumably because of the smell) a practice continued by my Scandinavian relatives back in the Upper Midwest. These ceramic pots (still available from Red Wing Pottery last time I checked) were generally kept near the curb of the residence. According to my grandmother, the "best" lutefisk was that which the neighborhood dogs seasoned by lifting their leg while making their rounds.
